I'm having an extremely hard time with lower-calorie substitutes

I'm not sure if this is the right place, but I am trying to diet, count calories, etc. for basically the first time in my life. I've always been considered a "picky eater".

I am having an incredibly hard time trying to find palatable substitutes for various foods, and it's making me feel discouraged and frustrated already. For example, I routinely eat assortments of vegetables over rice, which until now I've always thought was healthy; but even a moderate serving of rice is like 350 calories all by itself, and all I ever hear about carbs is how terrible they are, so I started looking for better alternatives.

I tried cauliflower rice for the first time last night, and I ended up throwing it away after one bite, because the combination of the smell and taste was inedible for me.

Tea isn't the same at all with coconut milk instead of half-and-half. Trying to eat konjac noodles with tomato sauce makes me feel like I'm a zombie eating someone's slimy guts. Powdered peanut butter tastes like the fermented ghost of its hearty counterpart.

I'm so discouraged by all of the blogs proclaiming that they'll never go back to normal pasta or normal rice or normal bread again, because the alternative is just that amazing. All the low-calorie substitutes that I'm trying so far are terrible!

Am I really just abnormally picky? Has anyone else struggled with "this just isn't remotely comparable" trying to find substitutions and alternatives?
