Question about calorie deficits with limiting food intake vs activity level

So I (5’4 F) try to keep my calorie intake around 1200 per day, while my TDEE can range from around 1400-1500 on a really lazy day, to just over 2000 on days I exercise. I usually exercise around 5 times a week, and on the days I don’t I try to make up for it a little by running errands or whatnot, Of course there are also days like today where I do next to nothing. I have my Fitbit set to give me a 750 calorie deficit per day so I lose about 1.5 pounds a week. My question is, on those lazy days I burn way less calories, should I continue eating around 1200 and just accept that my deficit for that day will be smaller, or can I reduce my calorie intake below 1200 so I can maintain that 750 calorie deficit? I don’t want to slow my metabolism or lose muscle by eating too little, but not even sure if it would make a difference only doing that every once in a while. Opinions?
