At what point/level should you eat back calories burned with workouts?

So, last year I lost about 70-75 pounds; I’ve been stuck in the same place +/- 5 pounds for the last handful of months. I’m getting myself back on my wagon and mixing up my workouts. I’m currently at 330 pounds and hitting the gym 3 days a week. My question comes in because this week my elliptical workouts have been burning 700+ calories while I’m still eating 1200-1500 calories. Just wondering if it’s smart to keep that up or if I need a bit more on those days.
