TLDR: I realized that I was eating like crap even while dieting, eating greasy food and not near enough veggies when I needed a snack
I've been an on again off again dieter for longer than I care to mention but the biggest issue I've had is that I tended to allow a bit too much of fatty greasy unhealthy food because it taste so darn good which really didn't allow for much room later on in the day for the diet so I tended to go over calories at least 3 times a week. Flash forward to May of 2019 and I had what I can only describe as feeling like someone stabbed me in the stomach and pushed the knife all the way through to my back. It was due to gallstones which I learned after an ER visit. After an appointment for an ultrasound my doctor said my gallbladder had to come out but until that time I needed to cut my fat content down to about 4g of fat per meal. Next surgery appointment was 2 months out (Which was pushed back another month thanks to catching a cold 4 days before my surgery) For the first week I ate pretty much fruit and turkey exclusively, absolutely terrified that I was going to have another attack. The incredibly restrictive diet really depressed me for the first month because while I saw my family enjoying things I used to enjoy like cheese, bacon, ground beef, etc etc I was stuck eating fruit, lean meats, and whole grains. 2 months later I got really good at figuring out what foods I could eat and what I couldn't while getting very creative with my seasonings and finding very low fat alternatives which I can assure you had 1/100 of the flavor of the original but you totally adjust over time after you forget what the original taste like. After going on 4 months now, I realize that I was really not eating very healthy in spite of trying to lose weight. I ate chips with every lunch, simple carbs like pretzels, white bread, tons of cheese that was full of oil, fatty meats, etc etc and over the course of 4 months I've lost about 20lbs and the weightloss has certainly help take a lot of load off my knees and ankle which used to pop a lot. While it certainly sucked to have a gallbladder attack, it was a blessing in disguise because it finally taught me how to eat healthy. Saturday I can finally start to incorporate more fat into my diet and I admit I plan to eat a single slice of pizza but I totally plan to maintain this healthy eating. Fruits, veggies, lean proteins, and plenty of water aren't so bad.
