My son and I have been dieting using this app for almost a year and we are both losing a fair amount of weight. The one thing that we both miss is truly delicious treats that will not derail our efforts.I have been trying to devise a recipe which would be truly yummy while still being VERY low calorie and I think I finally have it. You can vary it by adding other fruits, or substituting a different fruit entirely. You can also vary the spices, add nuts, etc. Just don't forget to adjust the calories accordingly. I plan on next trying it made with peaches. If you try it, please let me know if you like it as much as we do!
Super Low Calorie Apple Crisp
Filling: 3 lbs MacIntosh Apples, peeled and sliced (238 calories) 2.5 T. Cornstarch (75 calories) 1 t. Ground Cinnamon ½ t. Ground Nutmeg I cup Splenda or other granulated no calorie sweetener
Topping: 8 slices of reduced calorie bread (Mine was a store brand at 35 calories a slice)(280 calories) ¾ t. Ground Cinnamon ¼ t. Ground Nutmeg ¾ T. Cornstarch (23 calories) ¼ c sugar free maple flavored syrup (15 calories) ¾ - 1 cup Splenda, depending on how sweet you would like it to be
Makes 2 pie plates full of apple crisp Total calories = 631. Each “pie” = 316. So basically you can eat a half a pie plate full for only 158 calories!
While peeling and slicing the apples, put the bread slices into the oven at 300 degrees until they are dried through and have browned a little.
Filling: In a small bowl, mix 2.5T cornstarch with 1 t. cinnamon, 1/2t. nutmeg and I cup Splenda, by whisking together. Place apples into a plastic bag and place the above cornstarch mixture in as well. Shake the bag until the slices have been coated and the cornstarch mixture has been absorbed. Divide slices between two standard pie pans.
Topping: Break up your dried bread slices into crumbles. Put them into a bowl and mix with 1 c. Splenda, ¾ T. cinnamon, ¼ t. nutmeg, and ¾ t. cornstarch. Divide in half, adding half over the apple slices in each pie pan. Drizzle sugar free maple syrup over both crisps and bake at 350 degrees for about twenty – thirty minutes; until apples slices are soft and the smell is too heavenly to wait any longer. Enjoy!
There are lots of ways to vary the recipe, adding nuts, or additional types of fruit; or topping with whipped cream or cool whip. Just remember to adjust the calories accordingly.
